Hummus

A smooth, creamy, and nutty flavored appetizer for dipping breads or vegetables. Hummus is a very old dish dating back to 1200 AD emanating from the Middle East, Mediterranean, and North African regions, still being a central part of their cuisine to this day. What has changed is its popularity on a world- wide level. In the early 2000's, Hummus gained popularity in the United States, and its consumption here has done nothing but soar. As of 2015, farmers in the USA were producing 100,000,000 pounds of garbanzo beans per year with the Sabra Company dominating the majority of the Hummus market with sales topping out at nearly 1 billion dollars in 2017. Hummus is still essentially made today just as it was back in the 13th Century, with the few ingredients that were so readily available to their culture almost 1,000 years ago. Hummus is traditionally served either hot or cold, and as a side dish or entrée. Be creative and use herbs or spices with which you enjoy eating or experimenting. Dip flatbread, vegetables, crackers, chips....Whatever you can think of dipping.

Ingredients:

Instructions for Preparing the Hummus:

  1. Drain the garbanzo beans; reserving the liquid

  2. Using the blending blade of a food processor; pulse the garbanzo beans until they begin to get a smooth texture.

  3. Stop the food processor and remove the lid. Add the tahini to the garbanzo beans. It's too difficult to get it through the "chute", that is why i remove the lid.

  4. Juice the lemon; removing any seeds, and add it to the processor. This is easy to add by way of the "chute" of the food processor.

  5. Using a garlic press, mince the garlic directly into the processor basin.

  6. Drizzle in 3-4 Tbsp. of your favorite extra virgin olive oil.

  7. Toss in your pinches of salt (you certainly are welcome to add more at any time to your personal taste).

  8. Run the food processor until the mixture is a smooth whipped texture. This is the point where you can taste it and add any more tahini, olive oil, or salt to your palates liking.

Note

Variations:

  1. Put a dollop of sundried tomato spread in the middle of the hummus.  Just throw some sundried tomatoes, and a few pinches of sugar in a food processor and pulse it until you get a paste.  You'll love it!
  2. Roasted red peppers are tremendous in hummus.  Buy a jar, or roast them in the oven at 400 degrees until blackened.  Put as many peppers as you'd like in the food processor with the chick peas.
  3. SPICE IT UP!!  Add some fresh jalapeno's to the processor.  Ground cayenne pepper will provide a somewhat milder taste.  If you're one of those people who likes melt their throat; then toss in a habanero or carolina reaper.
  4. Adding extra garlic is yet another option to change things up.  Pulse it in the food processor with the chick peas.
